Unlike the single point heating systems of immersion circulators, SousVide Supreme's patented design and precision temperature control technology ensures even temperatures without the need for a circulator motor. As heat rises from the edge-to-edge heating plate in the base, it creates highly efficient thermal convection which maintains consistent temperatures throughout the water bath without the need for agitation. The SousVide Supreme water oven also features cool touch housing with its double-wall insulated design, ensuring maximum heating efficiency and energy savings. Use my Sousvide Supreme a lot. Its is just what it needs to be for excellent sous vide cooking, no fuss, simple design and management. I thought the lack of a circulation pump would be something of downside but even when really full every piece comes out just like to others.

The SousVide water oven can do more than prepare meals. It is a wonderful machine to prepare wort out of malt barley for an all grain beer. I even made cheese with my SousVide Supreme. This is an indispensable appliance for my home- I own two!

I can't believe the fantastic food this product produces. If you want to impress your friends, sous vide your meat/poultry/seafood every time you entertain. Try the "Butter Poached Lobster" recipe on this site. It's just amazing. I am a pastry chef, and have not used this for any of my baked goods, but at least once a week when cooking for family or friends, I use it. It's a permanent fixture on my kitchen counter. This machine does not go in a cabinet. Trust me, it's the best thing since sliced filet.....and that filet will be cooked absolutely perfectly if you use the Sous Vide Supreme!

This is a wonderful water oven - very reliable, works perfectly every time, and really worth the cost. My hubby and I are conventional cooks but we decided to try this for more succulent results, and the Sous Vide Supreme does not disappoint. We have the regular and not demi, which is the perfect size for a dinner party. There is only one thing wrong with Sous Vide cooking - there aren't enough cookbooks out there catering to us! I bought all the cookbooks there are with Sous Vide Supreme and am still looking online for new and interesting recipes to try. What I'm really looking for is a Sous Vide Dinner Party cookbook, with times, and menus so that one can try out different dinner menus for a party of 8! I wish someone would create such a cookbook/instructions! Anyhow, I'm super pleased with my Sous Vide Supreme. It really works! Fish is amazing in it - so delicate and flavorful. I'm now thinking that this is Eric Ripert's secret over at Le Bernadin. Chicken is a bit weird in it, but

A wonderful steak and then some!

Having had a Sousvide demi for a year I decided that I would like something a little larger and purchased the Supreme. I am delighted at being able to cook larger quantities to the same high standard. At Christmas the Supreme is a godsend, taking care of all the vegetable dishes without having to worry about timings. I frequently prep the veg, seal it in the pouches and store it in the fridge until needed. It then cooks in the Sousvide leaving me to roast the meats. The benefits of the Sousvide are too numerous to mention but with the 'barbeque' seaon up and coming it will be working hard cooking all those lovely steaks, sausages and corncobs ready to just flame on the coals. Guaranteed to be perfect every time.

I bought my SVS in November 2010, so this isn't a "look, it's so new and shiny" review, though it is still shiny. My SVS is used regularly each week, for a broad mix of items: the usual steak (consistently excellent results), chicken (both boneless and quartered whole chickens), perfect seafood, custard bases for ice cream, etc. It's still working as well as the day I got it. I use the SVS more than my conventional oven. It requires little to no attention to deliver consistently excellent results.

I'm not a professional, but I am a busy person who doesn't have time to prepare good food consistently. Since August of 2013, my SousVide Supreme has allowed me to keep ahead preparing delicious item that I cut up and reseal for freezing. I just grab a delicacy on the way out in the morning and I'm set for breakfast and lunch. I get perfect results without standing around fussing with the preparation. My items usually cook at lower temps for much longer than the minimum times in the charts -- I like it that way. I also don't sear stuff later, which I consider tending toward less healthy. My purchase has been worth every penny to me. The machine has labored flawlessly for months.

Does what it says it does, but could do with a circulator

I've had this for quite a long time now, and use it often. It keeps a good temperature but I find that when the bath is loaded with more than a few items,then the temperature is not as even within the bath. I wish there was a circulator within it to make sure that the water was really evenly heated -especially for the longer cook times needed for tough meats.
